The Gin Vault

Originally a herbal medicine in the Middle Ages the Ductch physician Fanciscus Sylvius is often falsely credited with the invention of gin in the mid-17th century although there were already some 400 distillers in Amsterdam by 1663 and English soldiers providing support in Antwerp against the Spanish in 1585 during the Eighty Years' War were drinking Genever for its calming effects before battle, from which the term Dutch Courage is believed to have originated.

Gin emerged in varying forms in England in the early 17th century gaining wider appreciation following the assumption of the throne by William of Orange, ruler of the Dutch Republic, and his wife Mary during the Glorious Revolution. It rose significantly after the Government allowed unlicensed gin production whilst imposing heavy duty on all imported spirits, the Gin Craze saw thousands of gin shops spring up throughout the country – over half of the 15,000 drinking shops in London were gin shops.

The Gin Acts of 1736 and 1751 regulated the production and sale in a more orderly fashion. 18th century gin produced in pot stills tended to be softer and sweeter, often containing sugar, a style referred to as Old Tom Gin, although this faded in popularity in the 19th century as the invention and development of the column still in 1831 made the distillation of neutral spirits practical, thus enabling the creation of London dry gin.

Today gin has evolved to become one of the broadest category of spirits, represented by
products of various origins, styles and flavour profiles that all revolve around the juniper
berry as the common ingredient.

The two main types of gin we offer are:

Distilled Gin - Neutral spirit infused with juniper berries and other botanicals then re-distilled. The juniper taste must be predominant.

London or Dry Gin - Similar to distilled gin in that flavours must be introduced exclusively through re-distillation in traditional stills with a resultant distillate of at least 70% abv. It may not contain any sugar, colourants or added compounds other than water in the
finished product.

There are three basic styles of production:

Post Distilled Gin – Traditionally produced by distilling a fermented grain mash from barley and/or other grains, then redistilling it with flavouring botanicals to extract the aromatic compounds.

Column Distilled Gin – Produced by first distilling high proof neutral spirits from a fermented mash using a refluxing still such as a column still. The fermentable base may be derived from grain, sugar beet, grapes, potatoes, sugar cane or any other produce of agricultural origin. he highly concentrated spirit is then re-distilled in a pot still with juniper and other botanicals, usually held in a "gin basket" positioned at the head of the still, allowing the hot vapours to extract the aromatic compounds. This method yields a gin lighter in flavour than straight pot distilled gin, resulting in either distilled gin or London dry gin, depending on how the spirit is finished.

Compound Gin - Made by simply flavouring natural spirits with essences and/or other 'natural flavourings' without re-distillation, this is not as highly regarded as distilled gin.

Gordon's Special Dry London Gin

The eponymous London dry gin Gordon's was first produced in 1769. The recipe has remained a closely guarded secret ever since – nearly 250 years – known to only twelve people worldwide at one time!

Distilling: Triple distilled for extra dryness and smoothness in a traditional copper pot still. This process takes 10 days, no sugar is added rendering it a 'dry gin' with hidden impurities.

Botanicals: 8 Juniper, coriander seeds, angelica root, liquorice, orris root, orange, lemon peel, secret ingredient.

Tasting Notes: Juniper is the principal scent on the nose. This is balanced out with plenty of fresh citrus and coriander and a hint of added spice creating a fruitiness on the palate. A deep and lasting flavour.

Bombay Sapphire

The iconic blue bottle helps makes this one of the best known gins in the world. Delicately perfumed Bombay Sapphire is credited with kickstarting the gin renaissance following its introduction in 1987.

Distilling: Triple distilled using a Carterhead still with the alcohol vapours passed through a mesh basket containing the botanicals to gain flavour and aroma. This gives a lighter, more floral gin than the more common 'punchy' gins distilled using a copper pot still.

Botanicals: 10 Almonds, angelica, cassia, coriander, cubeb berries, grains of paradise, juniper, lemon, liquorice, orris root.

Tasting Notes: Strong citrus nose with good alcohol and juniper notes and a sweet, distinct floral, fruity character in the background. Bright and strongly aromatic.

Hendrick's

Quirky and delightfully curious, Hendrick's was launched in 1989. Infused with Bulgarian rose and cucumber this incredibly refreshing gin is distilled in the remote Scottish distillery at Girvan.

Distilling: Pot-still distilled in small batches of just 450 litres allowing the distiller greater control in retaining the flavour characteristics. Hendricks brings together two different spirits from two different stills to create the perfect smoothness and balance of flavours. The Carterhead still uses a vapour-driven flavour basket on top of a long neck for freshness and delicacy.

Botanicals: 13 Rose petals, cucumber, juniper, coriander, orange peel, lemon, yarrow, elderflower, angelica root, caraway, chamomile, cubeb berry, orris root.

Tasting Notes: Unique on both the nose and the palate with the infusion of rose petals and cucumber, which really come through. Vegetable rather than fruity in character. Unexpected and imaginative, it is the ultimate refresher.

Tanqueray Export Strength

The traditional connoisseur's favourite beloved by bartenders across the world for its rich citrus led palate. Tanqueray boasts a higher percentage of juniper than almost all other gins, this magnificent old style gin is still the benchmark.

Distilling: Four-times distilled for the purest of flavours. The fermentable base is column distilled and derived from grain then redistilled with botanicals in a pot still. Botanicals suspended in a gin basket which allows hot alcoholic vapours to extract the full variance of flavouring components.

Botanicals: 4 Juniper, coriander, angelica root, liquorice root.

Tasting Notes: Zesty and fruity on the nose and the palate. The flavour is clear and pungent with strong aromas of juniper and liquorice. Strong notes of alcohol at the end balanced out with a spicy heat from the botanicals.

Adnams First Rate

A top-notch juniper-led gin with a heavy palette from the Southwold brewery. A number of Queen's Head regulars will remember fondly, or perhaps recall a great deal, of several excursions to Adnams for both brewery and distillery tastings.

Distilling: Beer wash made from three grains before being put through a beer stripping column to remove all the alcohols. These are distilled in a copper pot still to create a clean and pure spirit, which is returned to a copper pot still to be infused with thirteen botanicals.

Botanicals: 13 Juniper, coriander seed, cardamom pod, sweet orange peel, liquorice root, angelica root, orris root, cassia bark, caraway seed, fennel seed, thyme, vanilla pod, lemon peel.
Tasting Notes: Big, full of flavour and powerful from nose to mouth. Strength of spirit balanced out with softer fruitier notes of citrus.

Adler Berlin Dry

A fusion of the old-fashioned Prussian and the hip excitement of Berlin, 'Adler' is the German word for 'eagle', the insignia of Prussia. Originally founded in 1874 the Preussische Spirituosen Manufaktur (Prussian Spirits Company) was re-envisioned in 2008 by Ulf Stahl and Gerald Schroff.

Distilling: Distilled twice with a wheat base using vacuum distillation at temperatures below 80 degrees. It is then rested for 3-6 months in 100 year old earthenware pots.

Botanicals: 10 Juniper, ginger, allspice, cardamom, sage coriander, orange, lavender blossoms, lemon peel, anise.

Tasting Notes: Cardamom, juniper and ginger all strong in the aroma. There is an initial hit of juniper on the palate before the spicy cardamom, coriander, ginger and sage come through. There is a fresh but spicy aftertaste.

Aria Portland Dry

Created by a professional bartender this is a traditional London dry style gin distilled by hand in the heart of northwest Portland, Oregon, USA.

Atomic

Set up 9 generations ago by brothers from Belgium, this still family-run business is based in an old Grappa distillery in the Italian Dolomite Mountains.

Audemus Pink Pepper

This distillery combines ancient distilling techniques from Cognac, France with a contemporary, small-batch, innovative approach giving an unconventional gin.

Distilling: Made using reduced-pressure distillation, each botanical is macerated in alcohol and distilled separately before being combined in a base of slow-reduced wheat spirit.

Tasting Notes: Peppery, spicy aromas with a sweetness underneath. Pink peppercorn is powerful initially followed by a warming honey and piney juniper flavour. There is a lingering finish of spicy pepper.

Berkeley Square – Still No. 8 Limited Release

From G&J distillers this is a special release of a stronger version of their original gin. No. 8 refers to the copper pot still used.

Berry Bros. & Rudd No. 3 London Dry

The own label gin of this famous St. James's Street wine and spirits merchant. Distilled to a proprietary recipe, London No. 3 has juniper at its heart and unashamedly celebrates the integrity and character of traditional London dry gin.

Tasting Notes: Fresh, clean and citrus with the juniper adding that unmistakeable taste of pine and lavender. Spicy, aromatic and warm with a slightly peppery finish.

Blackdown Sussex Dry Gin

From the Lurgashall Winery at the foot of Blackdown Hill, Southdowns National Park, launched in 2013, it is the first gin produced in Sussex.

Distilling: Distilled seven times, blended with the purest of water and charcoal then silver birch sap is added to the mix once it has been reduced to bottling strength.

Tasting Notes: Strong juniper and lemon scents on the nose. Earthiness in the taste is balanced out by the powerful citrus notes. Finish is woody and fruity with a perfect smoothness.

Blackwoods

Produced on the Shetland Islands, the distillery is at a latitude of 60 degrees north, so this hefty 60% gin is perfect for the harsh weather that gives rise to unique botanicals.

Distilling: Distilled in traditional copper still pots using local, hand-picked botanicals. Due to the unpredictable climate the botanicals available vary each year giving slightly different flavours to each of the 'vintages'.

Botanicals: 10 Juniper, angelica, sea pink, marsh marigold, meadowsweet, coriander, citrus peel, cinnamon, liquorice, nutmeg.

Tasting Notes: The nose bursts with fresh citrus and subtle floral notes. On the palate the floral character is stronger with citrus undertones. The finish is very smooth.

Bluecoat Barrel Reserve

Bluecoat is the latest addition to the ranks of American craft gins coming to these shores. Distilled in Fishtown, Philadelphia using custom hand-hammered copper stills. This is the barrel-aged version of the original American dry gin, Bluecoat.

Distilling: After a traditional distillation the gin is aged in new American oak barrels for at least 3 months.

Tasting Notes: The nose is sweet with juniper notes. The palate is initially sweet giving way to earthy juniper, followed by a lingering, bright, citrusy finish.

Bols Genever Gin

The Bols family opened their distillery in Amsterdam in 1580 making it one of the oldest still in existence. This gin is still produced using Lucas Bols' 1820 recipe that was hugely popular in the late 1800s as cocktails boomed in the US.

Distilling: Made with 50% malt wine created from long fermented rye, corn and wheat. Triple distilled in copper pot stills before being infused with botanicals and bought down to 42% alc/vol.

Botanicals: 9 Juniper, lemon, orange, spice, malt, sweet cherry, coriander, angelica, orris.

Tasting Notes: On the nose there is a confident aroma of malt and spice with a hint of fruitiness coming through. It offers a different dimension on the palate; grassy with strong juniper flavour and hints of barley and sourdough bread. A spicy finish with a strong peppery taste. Unique in flavour, leaves a sweetness behind.

The Botanist Islay Dry

This artisan, small-batch gin is made using a mix of wild botanicals local to the Hebridean island where it is produced. The mix of 31 botanicals gives a floral, complex and highly distinctive gin, perfect with tonic.

Distilling: Done at a gentle simmer in an old Lomond Pot Still which has been adapted to slow the process and promote reflux. Only the purest and lightest vapours enter the lyne arm where the botanicals are held.

Botanicals: 31 9 traditional gin botanicals plus a further 22 local ones including - Apple mint, chamomile, creeping thistle, downy birch, elder, gorse flower, hawthorn flower, heather flowers, juniper, lady's bedstraw, lemon balm, meadow sweet, mugwort, red clover, spearmint leaf, sweet cicely, bog myrtle, tansy, water mint, white clover, thyme leaf, wood sage.

Tasting Notes: Distinctly floral with bass tones provided by seeds and barks. Full on the nose particularly with citrus menthol and wild flowers. On the palate it starts off cool but grows in warmth whilst remaining punchy and fresh. Strong, spicy lingering aftertaste.

Both's – Old Tom

Both's distillery is located in Haromex, Germany. The Old Tom replicates the Old Tom Gins used in classic cocktails of the 1800s.

Brandon's Rock Town

Arkansas' first legal distillery since Prohibition and awarded a 'Double Gold' medal in the San Francisco World Spirit competition 2011. American style, small batch gin using an unusual botanical vapour infusion technique.

Tasting Notes: Beautifully fresh aroma on the nose bought through by the citrus peel. Peppery, spicy taste with the juniper being the dominant flavour all the way through but nicely balanced by the lighter botanicals.

Breuckelen Glorious

Breuckeln is the Dutch colonial spelling of what is now Brooklyn. A new distillery that started in 2010 in the heart of Brooklyn, New York.

Tasting Notes: Herby nose with strong rosemary and juniper. The mouth is earthy with juniper, tangy grapefruit and undertones of ginger. Overall very complex and spicy palette.

Broken Heart

This gin is a venture by two Germans living in New Zealand. When Bernd died prematurely, Joerg continued the venture alone and named the gin in honour of his friend.

Bulldog

A unique gin, with complex flavours from a small distillery launched in 2006, pre-empting the surge in popularity of bespoke gin.

Distilling: Distilled four times in a copper pot still. The gin is passed through a condenser and then liquefied to produce its unique essence.

Botanicals: 12 Chinese dragon eye, Turkish white poppy seeds, Italian juniper, Moroccan coriander, German angelica, Spanish lemon, Chinese liquorice, Italian orris, Spanish almonds, Asian cassia, French lavender, Asian lotus leaves.

Tasting Notes: Hugely floral on the nose, balanced out by citrus notes. Although juniper is dominant, each sip brings out a new dimension bought about by the unique botanicals. Smooth and harmonious in flavour with a warm floral finish.

Buss No. 509 White Rain

This Belgium distillery, unusually, started with a raspberry flavoured gin and has only now released an unflavoured version – White Rain.

Distilling: Distilled in the traditional manner, this is a unflavoured version of their previous flavoured gins.

Tasting Notes: Classic nose with spicy elements. The taste is fresh and herbal with citrus and coriander coming through. There are clear spicy notes of cardamom, ginger and liquorice and hints of vanilla.

Cadenhead's Classic

Scotland's oldest independent distillery has been making gin since 1842 and their history shows in this traditional juniper-led gin.

Tasting Notes: Very aromatic on the nose with the dominant notes of citrus fruits. On the palate; juniper well balanced by the light and fruity strength of the citrus again. Ideal when mixed with tonic water.

Caorunn

'Caorunn' is Celtic for 'rowan berry', the major botanical in this proudly Scottish gin that combines Scottish distilling experience, pure Highland water and classic Celtic botanicals.

Distilling: Distilled in small batches of less than 1,000 litres using pure grain spirit. This is then vaporised through a unique Copper Berry Chamber in which the botanicals are spread out so the vapour can pick up as many flavours as possible.

Botanicals: 11 Rowan berry, heather, coul blush apple, dandelion, bog myrtle, juniper, coriander, orange peel, lemon peel, angelica root, cassia bark.

Tasting Notes: A floral and spicy aroma on the nose freshened up by hints of citrus. On the palate it is a sweeter option whilst still maintaining the crispness and cleanness from the juniper berry. A long lasting finish which dries out towards the close.

Cream Gin

This is a blend of gin and cream, although it is deceivingly colourless, produced in partnership by the Master of Malt and an East London bar, the Worship Street's Whistling Shop.

Distilling: This gin is cold-distilled using fresh cream to allow 100ml of cream to be added per 700ml bottle of gin without giving burnt cream flavours.

Botanicals: 8 Cream, juniper, orange, cassia root, liquorice, coriander, cinnamon, orris root

Tasting Notes: Citrus aroma with hints of vanilla and cream. It has a creamy rich palette yet is spicy and citrusy with a juniper lead.

Da Mhile Seaweed

This Welsh distillery made the first organic whisky of the modern era. Da Mhile translates to '2000' which represents Savage-Onstwedder's aim to create an organic drink to commemorate the new millennium. This gin is their latest offering designed to complement seafood and infused with handpicked seaweed from the Celtic coast.

Distilling: Distilled is small batches, the seaweed is infused over 3 weeks to impart a coastal character and a very subtle green colouring.

Botanicals: 7 Juniper, seaweed, lemon, thyme, fennel, pepper, cardamom.

Tasting Notes: Fresh nose with citrus and pine notes. The gin leads on the palate with lavender and citrus, followed by piney juniper with minty notes. The finish is long and earthy.

Darnley's View

A Scottish gin named after Mary Queen of Scot's husband Lord Darnley whom she first spied in 1565 through the courtyard of Wemyss Castle in Edinburgh, family seat of the Wemyss family, renowned vintners and spirit merchants.

Distilling: The neutral grain spirit is traditionally pot distilled four times.

Botanicals: 6 Juniper, orris root, elderflower, lemon zest, coriander, angelica root.

Tasting Notes: Notes of all six botanicals come through on the nose, dominated by citrus aroma from the lemon peel and freshness from the coriander. On the palate the first hit is of the juniper berry which then quickly emanates into a fruitiness from the citrus. Tanqueray London Dry

The traditional connoisseur's favourite beloved by bartenders across the world for its rich citrus led palate. Tanqueray boats a higher percentage of juniper than almost all other gins, this magnificent old style gin is still the benchmark.

Distilling: Four-times distilled for the purest of flavours. The fermentable base is column distilled and derived from grain then redistilled with botanicals in a pot still. Tasting Notes: Fresh grapefruit citrus notes. Subtle juniper and a delicious hint of spice, along with a touch of dryness on the palate.

Tanquery No. 10

Launched in 2000 No. 10 refers to the number of the still used. Made in small batches and highly recommended for martinis.

Distilling: Distilled in small batches using a unique quadruple distillation process. Traditional one-shot method used whereby the botanicals are distilled to produce the final strength of the spirit, in a copper pot still. Tanqueray No.10 is then heated by a steam jacket.

Botanicals: 9 Juniper, whole white grapefruit, lime, orange, coriander, chamomile flowers, cassia bark, angelica root, liquorice.

Tasting Notes: Fresh and crisp on the nose, dominated by citrus notes and followed by juniper. Awareness of grapefruit, coriander and chamomile but well balanced throughout. On the palate citrus and juniper lead the way but are balanced out by white pepper spice, chamomile and an earthiness from the cassia bark. Beautiful lasting finish.

The Duke

A traditional dry gin with two twists – it's made in Germany and Bavarian hops are among its 13 botanicals. Named after Henry the Lion who founded Munich in 1158.

The West Winds – The Cutlass

These distillers pride themselves on producing the first 'damn fine' gin from Australia. 'The Cutlass' is Australia's most awarded gin, combining traditional juniper with some uniquely Australian elements.

Ungava

This distiller takes pride in its North Canadian origin where the tundra meets icy seas. They use a selection of rare, native, wild botanicals in a Nordic style. Ungava Bay lies along the Hudson Strait in northern Quebec, home to the Cree nations.

VL92

Named after the historic Dutch sailing vessel which transported exotic spices, this gin has its roots in Dutch genever tradition using a malt wine base but their bold botanicals add a contemporary edge.

William's Chase Elegant Crisp

In the early 2000s the Chase family, potato farmers, decided to start marking their own crisps, - Tyrrell's. After the success of their crisps they moved on to developing potato vodka, followed by apple vodka and have now made a gin using cider apples.

Distilling: Organic cider apples are first distilled into Naked chase apple vodka before being redistilled into this crisp gin. This goes through a copper pot still and column, with 42 bubble plates twice, before going into the Carterhead style still. Distilled over 100 times.

Botanicals: 10 Juniper, hops, elderflower, Bramley apples, angelica, orange peel, lemon peel, coriander, liquorice, orris.

Tasting Notes: Fresh aromas of juniper and citrus with spicy notes coming through on the nose. On the palate crisp and elegant with juniper and apple being the dominant flavours, hints of spice and earthy undertones come through. Satisfying finish, full-bodied and aromatic.

Xoriguer

This gin is based on the recipe used by 18th Century British sailors stationed in Menorca, who used wine as a base as this was readily available. The gin is made by a descendent of one of the original craftsmen.

Distilling: Distilled in wood fired pot stills from distilled wine (eau de vie). Distillation begins when the vapours, produced in the still's boiler, circulate through copper pipes, they reach a coil where they condense, this liquid is captured in jars which is then placed in American oak barrels for a short period of time before bottling.

Botanicals: 1+ Juniper, all other ingredients kept a secret.

Tasting Notes: On the nose juniper berries are dominant, with fruity and herbal aromas coming up behind. Light bodied on the palate, again based mainly on juniper but with a woody earthiness coming through from the oak barrels, notes of rosemary and thyme are present. The finish is long and fruity.

Zuidam Dutch Courage

This gin is made by traditional Dutch methods including using wind power to grind the grain – the only distillery to still use only windmills for this. This family run distillery was started in 1975 sourcing several of the botanicals internationally for better flavour, including Italian juniper.

Tasting Notes: Herbal, tangy aromas on the nose with hints of juniper and spices. On the palate a fresh sweetness from the citrus dominates, followed by an earthiness from the herbs and an oiliness from the juniper, potpourri hints bring up the rear. The finish is intense but well balanced between citrus sweetness and bitter juniper.
